Italian-style Greens
I served this once at Thanksgiving and it was a smash, even with my daughter, who was two years old at the time.
Ingredients
- 1 bunch kale, washed, large stem removed
- 1 bunch swiss chard or spinach, washed
- 2 large red onions, sliced thin
- 4 cloves of garlic, minced
- 2 tbsp butter
- 8 Ry-Vita or WASA crackers, crumbled
- ½ cup parmesan cheese
Instructions
- Melt butter in large dutch oven over medium heat.
- Add onions and saute until soft and translucent, add garlic and cook for 1 more minute.
- Add chopped chard and spinach in parts and saute until each portion is nicely wilted. Continue adding all greens and cook for a few minutes longer, until greens are wilted.
- Then add cracker crumbs and parmesan cheese and mix.
- Serve immediately with hot pepper flakes on the side for the adventurous!
