Italian-style Greens

I served this once at Thanksgiving and it was a smash, even with my daughter, who was two years old at the time.

Ingredients

  • 1 bunch kale, washed, large stem removed
  • 1 bunch swiss chard or spinach, washed
  • 2 large red onions, sliced thin
  • 4 cloves of garlic, minced
  • 2 tbsp butter
  • 8 Ry-Vita or WASA crackers, crumbled
  • ½ cup parmesan cheese

Instructions

  1. Melt butter in large dutch oven over medium heat.
  2. Add onions and saute until soft and translucent, add garlic and cook for 1 more minute.
  3. Add chopped chard and spinach in parts and saute until each portion is nicely wilted. Continue adding all greens and cook for a few minutes longer, until greens are wilted.
  4. Then add cracker crumbs and parmesan cheese and mix.
  5. Serve immediately with hot pepper flakes on the side for the adventurous!
