Grilled Summer Vegetables with Herbs
Grilling is a fast way to cook, especially in the summer when you don’t want to heat up the kitchen! Adding fresh or dried herbs, which contain antioxidants, can drastically increase the nutritional value of your meal. UltraLite information: 2 servings, 5 carbs each.
Ingredients
- 180 grams of zucchini, quartered lengthwise
- 180 grams of yellow summer squash, quartered lengthwise
- 2 cloves of garlic, minced finely or put through a garlic press
- 2 tsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- Sea salt and pepper to taste
Instructions
- Heat grill to medium-high heat.
- Toss zuchinni and squash with minced garlic, olive oil and herbs until well coated.
- Pour into a grill basket and place on preheated grill.
- Stir (or flip depending on your grill basket) occasionally, cooking veggies until they are tender.
