Breakfast Pie
This recipe is for two UltraLite servings, 1 Protein and 5 Carbs each.
Ingredients
- 200 grams canned pumpkin
- 4 eggs, beaten
- 1 tsp pumpkin pie spice mix
- 2 vanilla UltraLite Packets
- 1-2 tbsp water, if needed
Instructions
- To beaten egg, add vanilla packets and pumpkin pie spice; mix well.
- Add pumpkin and mix until smooth, adding water a little at a time, to achieve a smooth texture.
- Pour into two lightly buttered ramekin dishes and bake at 375 for 25-30 minutes.
*Variation: Make it a meal by adding 4 sliced chicken sausages (the fully cooked kind) at the same time as the beans.
