Breakfast Pie

This recipe is for two UltraLite servings, 1 Protein and 5 Carbs each.

Ingredients

  • 200 grams canned pumpkin
  • 4 eggs, beaten
  • 1 tsp pumpkin pie spice mix
  • 2 vanilla UltraLite Packets
  • 1-2 tbsp water, if needed

Instructions

  1. To beaten egg, add vanilla packets and pumpkin pie spice; mix well.
  2. Add pumpkin and mix until smooth, adding water a little at a time, to achieve a smooth texture.
  3. Pour into two lightly buttered ramekin dishes and bake at 375 for 25-30 minutes.

*Variation: Make it a meal by adding 4 sliced chicken sausages (the fully cooked kind) at the same time as the beans.
